"Eggless" egg, vegan egg bhurji and other plant based meat alternatives, innovation at IIT- Delhi
A group of researchers headed by Kavya Dashora, assistant professor at Centre for Rural Development and Technology, IIT-Delhi have created vegan eggs from moong dal, which is also a rich source of protein. The taste and protein value is almost the same and has no cholesterol. Their first product, Anda Bhurji, is now available online. They are planning to come up with more plant-based meat products.
